Jelly Cheesecake

This dessert is very refreshing and perfect for hot summer days.
You can make it with any flavor of jelly you like, such as strawberry, pineapple, lemon, etc.

Ingredients

• 2 packets of jelly of different flavors (each for 500 ml)
• 300 g (10.5 oz) of Maria cookies, crushed
• 180 g (6.3 oz) of butter
• 1 teaspoon of vanilla extract
• 400 ml (13.5 oz) of fresh cream for whipping
• 1 can (397 g or 14 oz) of sweetened condensed milk
• 400 g (14 oz) of cream cheese
• Zest of 1 lemon
• 5 sheets of unflavored gelatin
• Fruit of your choice for decoration

   Make the jellies in separate bowls according to the instructions on the packet and store in the refrigerator.

   After the jellies are ready, prepare the rest of the dessert.
   In a saucepan, melt the butter.
   When the butter is melted, mix in the vanilla extract and remove from heat.
   Add the crushed cookies and mix well.

   In a round springform pan with a diameter of 26 cm (10.2 inches), spread the cookie mixture on the bottom.
   With a spatula, press down firmly until you have a compact base and store in the refrigerator.

   Soak the gelatin sheets, one by one, in cold water and let them soak for 5 minutes.

   In a saucepan, bring 100 ml (3.5 fl oz) of water to a boil.
   When it starts to boil, mix in the well-drained gelatin sheets, stir well, and remove from heat.
   If you prefer, you can do this process in the microwave.

   Whip the cream until it is very firm.
   While still whipping, slowly and alternately add the cream cheese and sweetened condensed milk.
   Continue to whip until the cream is homogeneous.

   Finally, add the gelatin dissolved in water and the lemon zest.
   Beat a little more until everything is well mixed.

   With a knife, cut the jelly into cubes.
   Carefully place the jelly cubes alternately on top of the cookie base using a spatula.
   Spread the white cream on top of the jelly.
   Shake the pan so that the cream is well spread.

   Store in the refrigerator for at least 6 hours until the dessert is cool and solidified.

    When ready to serve, run a knife around the edge of the springform pan and remove it.
    Decorate as desired with the fruit.
