Galette des Rois

Christmas is celebrated almost worldwide, but traditions vary from country to country, especially in gastronomy.
Galette des Rois is the "King Cake" of the French, traditionally containing a charm, similar to our traditional king cake.
This delicious recipe has the advantage of being easy and quick to make.

Ingredients

• 2 sheets of puff pastry
• 4 eggs
• 200 g (1 cup) of sugar
• 150 g (2/3 cup) of butter, softened
• 200 g (2 cups) of ground almonds
• 1 beaten egg for brushing
• Powdered sugar for dusting

Instructions

   In a bowl, place the butter cut into pieces and the sugar.
   Beat until creamy.
   While beating, alternately add the beaten eggs and ground almonds.
   Beat until everything is well mixed.

   Put the cream in a piping bag.
   On a large baking sheet, roll out one of the puff pastry sheets without removing the paper.
   Spread the cream in a circular shape over the base, starting from the center.
   Leave a 4 cm space without cream at the edges to close the pastry.

   Brush the pastry with water in the space without cream.
   Cover everything with the second puff pastry sheet without the paper.
   Press the edges very well so that the two sheets stick together.
   With the non-cutting side of a knife or a fork, mark around the edge of the pastry so that it is well sealed.
   Tuck everything in very well.

   With a knife, make a hole in the center of the pastry to let the air out while baking.
   Brush very well with the beaten egg, especially the edges.
   It is very important that the pastry is well sealed so that the filling does not leak while baking.
   Decorate the pastry as desired, marking it with the knife without cutting.

   Preheat the oven to 190°C (375°F) and bake for 25 minutes.
   After 25 minutes, sprinkle the pastry with powdered sugar.
   Return to the oven for approximately 10 minutes until the sugar melts.
   Once baked and golden, remove from the oven.
   It's ready to serve.
