Apple Meringue Tart

This dessert is as delicious as any apple tart.
It's not overly sweet, with a slightly acidic flavor, and it's not very high in calories either.

Ingredients

• 1 kg (about 2.2 lbs) of reineta apples (or any tart baking apple)
• 250 g (about 8.8 oz) of sugar
• 4 eggs
• 100 g (about 3.5 oz) of sugar
• 80 g (about 2.8 oz) of butter
• 1 cinnamon stick
• 1 teaspoon of vanilla essence
• Juice of 1 small lemon
• 1 round sheet of puff pastry for tarts

Instructions

   Peel the apples and cut them into pieces for a pot.
   Drizzle everything with the lemon juice.
   Add the 250 g (8.81 oz) of sugar and the cinnamon stick.
   Stir.

   Bring to the heat, cover and let it cook over low heat for about 20 minutes.
   When the apple completely breaks down and becomes a puree, remove from the heat.
   Let it cool a little.

   Break the eggs and separate the yolks from the whites.
   To the apple puree, add the vanilla essence and the butter.
   Remove the cinnamon stick.
   Finally, add the yolks and stir vigorously.

   Return to the heat and let it cook over low heat, stirring constantly until it thickens.
   Remove before it starts to bubble.

   In a 32 cm (about 12.6 inches) diameter tart pan with a removable bottom, spread the puff pastry and press well.
   Spread the apple puree on top.

   Bake in a preheated oven at 180ºC (356ºF) with the bottom rack on and bake for 15 minutes.

   Meanwhile, beat the egg whites into firm peaks.
   When they are firm, add the 100 g (3.52 oz) of sugar and beat until it becomes a meringue.
   After 15 minutes, remove the tart from the oven and using a piping bag, spread the meringue on top.

   Return to the oven and bake for 15 to 20 minutes, until the meringue is golden brown.
   Remove the tart from the oven and unmold.
   Serve the tart hot or cold, sprinkled with a little cinnamon powder.
