Delicious Coconut Tart

This tart is super delicious and quick to make.
Due to the consistency of coconut, this tart has two distinct layers: a moist base and a delicious sweet egg layer on top.

Ingredients

• 6 egg yolks
• 6 eggs
• 500 g (17.6 oz) of sugar
• 250 g (8.8 oz) of dried grated coconut
• Zest of 1 large lemon
• 1 teaspoon of vanilla essence
• 40 g (1.4 oz) of salted butter
• 1 24 cm (about 9.5 inches) diameter tart pan, previously buttered and dusted with sugar

Instructions

   In a saucepan, heat the sugar with 200 ml (about 6.8 fl oz) of water.
   Stir and let it come to a boil.
   Once boiling, let it boil for 3 minutes and then remove from heat.

   In a bowl, combine the coconut, butter, lemon zest, vanilla essence, and sugar syrup.
   Mix well until the butter melts.
   Let it cool for 5 minutes.

   Crack the eggs and add them one by one to the mixture, stirring well between each addition.
   Finally, thoroughly mix in the egg yolks.

   Pour the mixture into the tart pan.
   Place the tart pan in a high-sided baking tray.
   Fill the tray with enough water to cook the tart in a water bath.

   Bake in a preheated oven at 180°C (356°F) for 30 minutes.
   Halfway through, and when the tart starts to turn golden brown, cover it with a sheet of aluminum foil.
   After 30 minutes, when the tart is cooked, carefully remove it from the oven.

   Remove the aluminum foil and unmold the tart.
   Once the tart is cool, it is ready to serve.
