Simple Almond Cookies and Chocolate Almond Cookies

Almonds and chocolate are staples during the Easter period.
These cookies are very easy to make and require few ingredients, perfect for our children to make.
If you wish, you can make them with other nuts, such as walnuts and hazelnuts.

Ingredients

• 250 g (8.8 oz) of almond kernels or almond flour
• 80 g (2.8 oz) of brown sugar
• 1 tablespoon of slightly softened butter
• 1 egg
• Almonds for decoration
• Chocolate chips or chopped dark chocolate

Instructions

   In a grinder or processor, grind the almonds until they turn into flour.

   In a bowl, place the butter and sugar.
   With the kneading rods, mix everything very well.

   Meanwhile, add the egg.
   While kneading, gradually add the almond flour.
   Knead until the dough is homogeneous and peels off from the bowl.

   Divide the dough in half.
   Make small balls the size of brigadeiros.

   Place them on a baking tray previously greased with butter or lined with parchment paper.
   With a spatula, flatten the ball and place an almond in the center
   Repeat the process until the first half of the dough is used up.

   In the remaining dough, mix in chocolate to taste.
   Make balls of the same size, place them on the tray, and flatten them.
   If you wish, sprinkle with a little more chocolate.

   Bake in a preheated oven at 180 °C (356 °F) and let them bake for approximately 15 minutes until the cookies turn golden.
   After the cookies turn golden, remove them and let them cool down.
