Roast Chicken in the Oven with Beer

Roast chicken is a delicious, easy, and economical dish.
If you make this recipe with free-range chicken, it becomes even tastier.
If you want, you can make it with turkey or duck legs.
You can also use this seasoning to season chicken for the barbecue.
If you use store-bought chicken stock, be aware that it is already salty, so reduce the amount of salt.

Ingredients

• 1 chicken about 1.8 kg (4 lbs) with or without giblets
• 800 g (1.75 lbs) of potatoes for roasting
• 6 cloves of garlic
• 2 full teaspoons of mustard
• Piri piri to taste
• 2 full teaspoons of sweet paprika
• 1 teaspoon of powdered bay leaf
• 2 teaspoons of salt
• 50 ml (1/4 cup) of olive oil
• 80 ml (1/3 cup) of natural chicken broth
• 400 ml (14.1 fl oz) of beer
• Juice of 1 lemon
• 1 sprig of fresh rosemary
• 50 g (1/4 cup) of butter or margarine

   If the chicken has giblets, cut the nails from the legs.
   With a knife, cut the tip of the chicken's tail.
   Place the chicken and the giblets in a bowl.

   In a blender, place the garlic, salt, mustard, paprika, piri piri, bay leaf, olive oil, lemon juice, chicken broth, and beer.
   Blend everything very well.
   If you don't have a blender, use a stick blender.

   Cover the chicken with the prepared seasoning.
   Mix well and add the sprig of rosemary broken into pieces.
   Let it marinate for at least 1 hour.

   After the chicken has marinated, place it on a baking tray.
   Spread the giblets and potatoes around it.
   Drizzle everything with the seasoning.
   Spread the butter cut into pieces on top.
   Make sure to immerse the potatoes well in the seasoning.

   Preheat the oven to 200 °C (392 °F) and bake with only the bottom rack and the fan turned on.
   Let it roast for 1 hour and 20 minutes, turning the chicken every 40 minutes.
   If the chicken is free-range, leave it for another 20 minutes.
   When the chicken is well roasted and the sauce is well refined, remove it from the oven and serve.
