Green Bean Salad with Chicken

Warm salads are delightful in the winter.
In this recipe, you can use leftover cooked, roasted, or grilled chicken.

Ingredients

• 300 g of chicken breast, cut into cubes (approx. 10.5 oz)
• 100 g of chicken ham, sliced, cut into strips (approx. 3.5 oz)
• 400 g of green beans, cut into strips (approx. 14 oz)
• 1 carrot, grated
• 2 boiled eggs
• 4 tablespoons of olive oil
• 1 level tablespoon of mustard
• 3 tablespoons of vinegar
• Salt to taste
• Pepper to taste

Instructions

   In a pan with boiling water, season with salt and cook the green beans for 20 minutes.

   In another small pan with boiling water, season with salt and cook the chicken for 15 minutes.

   Once the chicken is cooked, remove it with a slotted spoon and let it cool.
   After the green beans are cooked, drain them and let them cool as well.

   Gradually, mix the olive oil with the mustard.
   Add the vinegar.
   Season with a pinch of salt and ground pepper.
   Mix everything well.

   In a salad bowl, add the green beans, grated carrot, chicken, and ham.
   Drizzle everything with the sauce and mix well.

   Serve the salad cool, garnished with the eggs cut into quarters.
