Cod à Lagareiro

Cod à Lagareiro is a traditional dish from Portugal, specifically from the Beira Baixa region.
As the name suggests, the cod should be surrounded by plenty of olive oil.
The cod can also be roasted on the grill instead of being cooked in the oven.
Serve this dish with a salad or cooked broccoli rabe.

Ingredients

• 4 soaked cod loins
• 650 g (1.43 lbs) of small potatoes for roasting with skin
• 250 ml (8.8 fl oz) of olive oil
• 1 large onion cut into half-moon slices
• 8 cloves of garlic, thinly sliced
• 4 bay leaves
• Salt
• Blend of 5 peppers
• Chopped fresh coriander

   In an ovenproof dish, preferably clay, pour a little olive oil on the bottom.
   Place the wet potatoes, season them with a little salt and pepper.
   Mix well and add a little more salt and pepper so they are evenly seasoned.

   Preheat the oven to 200ºC (392ºF) and roast for 30 minutes.

   Meanwhile, in a frying pan, heat the remaining olive oil, onion, and bay leaves.
   Stir and let it heat well.

   When the onion starts to soften, add the sliced garlic and heat slightly.
   Remove from heat and set aside.

   After the time, remove the potatoes from the oven.
   Slightly smash the potatoes with a fork and spread them around the dish.

   In the center of the dish, place 1/3 of the sautéed mixture on the bottom.
   On top, place the cod loins and cover everything with the remaining sautéed mixture.
   Finally, season the cod loins with the mixture of 5 peppers.

   Return to the oven, keeping it at 200ºC (392ºF).
   Roast for another 25 minutes.

   After the time, and when the cod is cooked, remove from the oven and finally, sprinkle with the chopped coriander.
