Cod Gratin with Shrimp and Leek

Cod dishes are enjoyed at any time of the year, but with the approach of Christmas and the cold, oven recipes are always highly sought after.
This recipe has a very pleasant blend of flavors and is different from more traditional dishes.
If you want, you can replace the potato with sweet potato.

Ingredients

• 2 soaked cod loins
• 600 g (21.2 oz) of thawed or fresh shrimp
• 120 g (4.2 oz) of slices of black olives
• The white part of 2 leeks cut into slices
• 600 g (21.2 oz) of frying potatoes cut into thin slices
• 100 ml (0.42 cups) of olive oil
• 3 bay leaves
• 50 g (1.8 oz) of butter
• 50 g (1.8 oz) of T55 wheat flour without yeast
• 200 ml (0.84 cups) of cream
• Nutmeg
• 1 sprig of chopped coriander
• 150 g (5.3 oz) of a mixture of grated mozzarella and emmental cheese
• Milk as needed
• Oil for frying
• Salt to taste
• Pepper to taste

Instructions

   Peel the shrimp, remove the intestine and reserve the shells.

   In a pan, place 1 liter of milk, the bay leaves, and the cod loins.
   Cover and after it starts to boil, let it cook on low heat for 10 minutes.
   Be careful not to let the milk spill over.
   After the time, remove the cod with a skimmer.

   To the milk that remained, add the shrimp shells and let it boil for 5 minutes.
   After the time, remove the shells with a skimmer and strain the milk in a fine net.
   Add enough milk to make 1 liter (35.2 fl oz).

   In a pan, heat the butter and let it melt.
   Add the flour and stir well with a whisk.
   Gradually and without stopping stirring, add the milk you reserved.
   Finally, add the cream.
   Adjust the salt seasoning and season with pepper and nutmeg.
   Stir until the sauce starts to bubble and remove it from the heat.

   Fry the potatoes in hot oil and place them on a tray with absorbent paper.
   Season the potatoes with a little salt.

   Meanwhile, clean the cod of skins and bones and shred it.

   In a pan, heat the olive oil and the leek.
   Stir and let it sauté well.
   To the sauté, add the shrimp and season with pepper.
   Sauté a little until the shrimp gains color.
   When the shrimp is almost fried, add the cod and let it cook on high heat for 2 minutes.
   Finally, mix in the olives, coriander, and 2/3 of the sauce.
   Stir well and as soon as it starts to bubble, remove from heat.

   In a baking tray, spread 1/3 of the cod on the bottom.
   Half of the potatoes, plus 1/3 of the cod, the remaining potatoes, and the rest of the cod.
   Cover everything with the remaining sauce and sprinkle with the grated cheese.

   Bake in a preheated oven at 200°C (392°F) and let it gratinate for about 20 minutes.
   When the cod is golden, remove and serve.
