Oven-Gratinated Cod

This is the favorite dish in our house and it's never missing from our Christmas Eve dinner.
This cod dish is reminiscent of the classic "bacalhau com natas" (cod with cream), but the addition of carrot gives it a special texture and flavor.
Without a doubt, it's an excellent choice for any celebration. Serve this dish with a mixed salad.

Ingredients

• 4 slices of soaked cod
• 850 g (approx. 1.87 lb) of potato, diced
• 400 g (approx. 0.88 lb) of grated carrot
• 2 onions, sliced in half-moons
• 3 cloves of garlic
• 200 ml (approx. 6.76 fl oz) of olive oil
• 4 bay leaves
• 200 ml (approx. 6.76 fl oz) of cream
• 500 ml (approx. 16.9 fl oz) of béchamel sauce
• Salt to taste
• Pepper to taste
• Nutmeg to taste
• 200 g (approx. 7 oz) of mozzarella cheese

Instructions

   In a pot of boiling water, cook the cod for 5 minutes.
   Remove and let it cool.
   Once cool, remove the bones, skin, and flake the cod.

   Preheat the oven to 180°C (356°F).
   Fry the diced potatoes and season with salt.

   In a large saucepan, heat the olive oil.
   Add the onions, chopped garlic, and bay leaves.
   Let it cook for a little bit.
   Halfway through, add the grated carrot and let it sauté for another 5 minutes, stirring occasionally to prevent sticking.

   Add the cod, pepper, and nutmeg.
   Let it cook for 2 more minutes.
   Add the béchamel sauce and cream, stirring constantly, and cook for 3 minutes.
   Turn off the heat and mix the diced potatoes with this preparation well.

   Transfer everything into a baking dish previously greased with olive oil and sprinkle with the mozzarella cheese.

   Gratinate in the oven for 15 to 20 minutes.
   Serve with a lettuce and tomato salad.
