Baked Asparagus with Bacon and Mushrooms

This recipe can be served as a side dish or as an appetizer.
If you want to complete the dish, serve an individually poached egg on top.

Ingredients

• 250 g (9 oz) of asparagus
• 250 g (9 oz) of sliced bacon
• 250 g (9 oz) of sliced fresh mushrooms
• Parmesan cheese
• 2 ½ tablespoons of olive oil
• 1 clove of garlic, minced
• Dried oregano leaves
• Salt
• Black pepper

   Cut off the toughest part of the asparagus and discard.

   In a high-sided frying pan with boiling water, add salt and the asparagus to cook for 5 minutes.
   After the time, remove them to a plate.

   In a frying pan, heat the olive oil and garlic.
   Stir and let it heat up.

   Add the mushrooms.
   Season with salt and pepper.
   Stir and let it sauté on high heat until the mushrooms lose their water.
   After the mushrooms are sautéed, season them with oregano.

   In an oven-safe dish, spread the mushrooms on the bottom.
   Wrap each asparagus in a slice of bacon.
   Place the rolls on top of the mushrooms.

   Finally, sprinkle everything with freshly grated Parmesan cheese.

   Bake in a preheated oven at 190°C (375°F) and let it roast for approximately 20 minutes.
   When the bacon is crispy, remove it.
