Baked Aged Cheese with Sausages

This comforting appetizer is perfect for sharing with friends and family.
If you want, you can make it with only the 'linguiça' sausage, or you can also make this recipe with 'chouriço' sausage cut into cubes.

Ingredients

• Soft paste aged cheese
• 100 g (3.5 oz) of 'linguiça' sausage, cut into thick slices
• 100 g (3.5 oz) of thin 'farinheira' sausage, cut into thick slices
• 2 cloves of garlic, chopped
• Dried oregano leaves

Instructions

   In a frying pan, heat the 'linguiça' sausage and let it fry until it takes on an even color.
   When it is fried, add half of the garlic.
   Saute a little without browning.

   Meanwhile, in another frying pan, heat the 'farinheira' sausage and let it fry evenly without browning too much.
   Add the remaining garlic and sauté a little more.

   Cut thick slices of the aged cheese.
   The cheese should be a soft paste type, such as creamy cheese, so that it melts easily.
   Place the slices on a clay plate.
   Finally, place a slice without the rind in the center of the cheese.
   On top, spread the 'linguiça' and 'farinheira' sausages.
   Sprinkle generously with oregano.

   Bake in a preheated oven at 190°C (374°F) and let it gratin for approximately 15 minutes, until the cheese melts.
   When the time is up, remove it from the oven and serve immediately with Mafra or Alentejano bread and toast.
