Vegetable Cream Soup with Celery

Celery has a very distinctive flavor and is perfect in soups, especially those containing bacon or meat.

Ingredients

• 3 potatoes
• 100 g of pumpkin, cut into cubes (approx. 3.5 oz)
• 2 carrots, cut into pieces
• 1 onion, halved
• 2 stalks of celery with leaves, chopped
• 1 cube of vegetable bouillon
• 50 g of bacon, cut into large pieces (approx. 1.8 oz)
• 30 ml of olive oil (approx. 2 tbsp or 1 fl oz)
• Salt to taste

Instructions

   1. In a pot with approximately 2 liters of boiling water (approx. 0.5 gallons or 67.6 fl oz), season with salt.
   Add the vegetable bouillon cube, pumpkin, potatoes, carrot, onion, celery, bacon, and olive oil.
   Let it cook for 30 minutes.

   2. Once the soup is cooked, remove the bacon.
   Blend the soup with an immersion blender.
   Once the soup is blended, let it boil.

   3. Serve the soup with the bacon cut into strips.
