Tuna à Brás

Normally we make Bacalhau à Brás at home, but this recipe is perfect with other ingredients such as tuna.
This can be canned in water, olive oil, or oil.
If you don't have pre-fried potatoes, you can make them at home, and if you prefer, you can replace the onion with leek.

Ingredients

• 2 small cans of tuna, preferably in olive oil, well drained, 85 g (3 oz) each
• 140 g (5 oz) of pre-fried straw potatoes
• 2 tablespoons of olive oil
• 1 large onion cut into half-moon slices
• 2 cloves of garlic, chopped
• 2 bay leaves
• 3 large eggs or 4 medium eggs
• Black olives
• Chopped parsley
• Salt
• Pepper

Instructions

   Break the eggs into a bowl.
   Season with salt and pepper.
   Beat with a whisk until it starts to foam.
   Add the chopped parsley and beat a little more.

   In a frying pan or a wide pot, heat the olive oil, onion, garlic, and bay leaves.
   Stir and let it sauté over medium heat until the onion starts to brown.

   Add the tuna, stir, and let it heat for about 2 minutes.
   Season with a little pepper and some salt.
   Stir very well and remove the bay leaves.

   Mix in the potatoes and blend everything very well.
   Lower the heat to the minimum and add the beaten eggs.
   Stir for a few seconds and remove.

   Serve the Tuna à Brás, accompanied by olives and a salad of your choice.
