Sweet Potato Salad with Yogurt

We are increasingly using sweet potatoes due to their low carbohydrate content.
This salad is perfect for a light meal and can accompany both fish and meat dishes.
If you prefer, you can make this recipe with regular potatoes.

Ingredients

• 500 g (1.1 lbs) of sweet potato cut into cubes
• 3 eggs
• ¼ of a red bell pepper cut into small cubes
• ½ chopped onion
• 1 chopped garlic clove
• 100 g (3.5 oz) of roughly chopped pitted black olives
• Chopped coriander (cilantro)
• 200 g (7 oz) of natural Greek yogurt
• Salt
• Pepper

Instructions

   In a pot with boiling water, add salt, the sweet potato, and the eggs.
   Cover and let cook for 10 minutes.

   Once the sweet potato is cooked, remove the eggs and place them in a bowl with cold water.
   Strain the sweet potato.
   Let it cool completely.

   Peel the eggs.

   In a bowl, add the yogurt, onion, garlic, olives, bell pepper, and coriander (cilantro).
   Season with salt and pepper.
   Stir well.

   Add 2 eggs cut into pieces and the sweet potato.
   Mix everything carefully.
   After everything is well mixed, garnish with the remaining boiled egg as you like.

   Store in the refrigerator until the salad is chilled.
