Razor Clam Rice

Razor clam rice is a traditional recipe from the Algarve region in Portugal and is a perfect accompaniment to fish fillets.
It is important that the razor clams are completely free of sand so that they don't spoil the dish.
You can cook this rice in a clay pot for even better results.

Ingredients

• 1 kg (2.2 lbs) of razor clams, placed in a bowl with cold water and plenty of salt, and refrigerated overnight
• 4 tablespoons of olive oil
• 1 chopped onion
• 3 chopped garlic cloves
• 2 bay leaves
• 3 chopped mini yellow peppers
• 3 chopped mini orange peppers
• 3 chopped mini red peppers
• 3 peeled and chopped ripe tomatoes
• Spice to taste
• 2 cloves
• Salt
• 150 ml (5 fl oz) of white wine
• 300 g (10.6 oz) of carolino rice
• 1 small bunch of chopped cilantro

   Rinse the razor clams well in several changes of water until they lose all the salt.

   In a pot with 800 ml (27 fl oz) of boiling water, add salt.
   Add the razor clams, and after 2 minutes, remove them with a slotted spoon to a platter and set aside.
   Strain the cooking water through a fine mesh and reserve.

   In a large pot, heat the olive oil, onion, garlic, bay leaves, and peppers.
   Stir and let it heat well.

   Add the tomatoes to the sautéed mixture and cook for 2 or 3 minutes.
   Pour in the white wine, stir, and cover.
   Cook for 5 minutes until the tomatoes start to break down.

   Add the rice, spice, and cloves.
   Stir and let the rice fry slightly.

   Add half of the reserved razor clam cooking water.
   Stir, cover, and cook over medium heat for 5 minutes.

   In the meantime, remove the razor clam meat and set aside.
   If they are very large, cut them in half.

   After the 5 minutes, add the remaining cooking water and adjust the seasoning.
   Stir, cover, and cook for another 5 minutes.

   After that time, mix in the razor clams.
   Stir, cover, and turn off the heat.
   Let it rest for 5 minutes.

    After the resting time, add the cilantro and serve immediately.
