Duck Rice

Duck rice is a traditional Portuguese dish, perfect for any occasion such as everyday meals or gatherings with family and friends.
If you like, you can substitute the bacon with ham.
Serve the dish with a salad and orange slices.

Ingredients

• 1 duck, about 2 kg (4.4 lbs), cut into pieces
• 2 small meat chorizos
• 150 g (5.29 oz) of bacon
• 1 ½ onion, cut into pieces
• 4 carrots, halved
• 2 garlic cloves, halved
• 2 bay leaves
• 1 sprig of parsley
• 10 cloves
• 650 g (1.43 lbs or approximately 3 1/4 cups) of parboiled rice
• Salt
• Black pepper

   In a large pot, bring 3 ½ liters of water to a boil.
   When boiling, add salt, pepper to taste, cloves, parsley sprig, bay leaves, garlic, onion, carrots, bacon, and one chorizo.
   Cover and let it boil.

   After 5 minutes of the broth boiling, add the duck pieces.
   Place the lid on the pot, but do not completely cover it, and cook over medium heat for about 1 ½ hours until the duck is well cooked.
   When the meat starts to come off the bones and is cooked, remove everything with a slotted spoon onto a plate.

   Strain the broth and measure the remaining amount.
   In the pot, add the broth back and enough water to make 2 liters (70.4 fl oz) of broth.
   Bring to a boil.

   When it starts boiling, add the washed rice, stir and cook over medium-high heat for approximately 17 minutes.
   When the rice is cooked and dry, turn off the heat.

   Meanwhile, when the meat has cooled, remove the skin and bones from the duck and shred it.
   Cut the carrots into small pieces and add them to the shredded duck.
   Also, cut the bacon and chorizo into cubes and add them to the duck.
   Cut the uncooked chorizo into thick slices and set aside.

   In a preferably clay ovenproof dish, spread half of the rice on the bottom.
   Place the shredded duck with carrots, chorizo, and bacon on top, and cover with the remaining rice.
   Use a spatula to smooth it out.

   Decorate the rice with the sliced chorizo.

   Preheat the oven to 180°C (356°F) and bake for 30 to 40 minutes until the rice is golden brown.
   Once the rice is golden, remove it from the oven and serve.
