Pumpkin and Walnut Cake

With the arrival of autumn comes pumpkin and nut season.
This pumpkin cake can also be made with almonds instead of walnuts.

Ingredients

• 500 g (1.1 lbs) of pumpkin cut into cubes
• 5 eggs
• 350 g (12.3 oz) of brown sugar
• 100 ml (3.4 fl oz) of coconut oil
• Zest of 1 orange
• Juice of 1 orange
• 200 g (about 7 oz) of chopped walnut kernels
• 1 teaspoon of cinnamon powder
• 1 teaspoon of nutmeg
• 300 g (about 10.6 oz) of type 55 wheat flour without yeast
• 2 teaspoons of baking powder
• 200 ml (about 6.8 fl oz) of cream
• 200 g (about 7 oz) of fresh cheese for spreading
• 3 tablespoons of honey
• Walnuts for decorating
• 1 buttered 26 cm (about 10.2 inches) diameter pan lined with parchment paper, buttered again, and dusted with flour
• Butter

Instructions

   In a pan with some boiling water, add the pumpkin to cook.
   Let it cook for 15 to 20 minutes until the pumpkin is cooked.
   After the pumpkin is well cooked, drain it and put it on a fine sieve.
   Allow it to drain well and cool a bit.

   After the pumpkin is well drained, place it in a bowl and mash it well with a fork.
   Break the eggs into a bowl and add the sugar.
   Beat until it forms a cream.
   While beating, add half of the orange zest, the coconut oil, cinnamon, nutmeg, mashed pumpkin, flour, baking powder, and orange juice to the cream.
   After the dough is homogeneous, remove it from the mixer.

   With a spoon, mix the walnut kernels into the dough.
   Pour the dough into the pan.

   Place in the preheated oven at 180°C (about 350°F) and let it bake for about 1 hour.
   After the cake is cooked, remove, unmold, and let it cool completely.

   After the cake is cold, make the topping.
   In a bowl, add the cream and beat until it becomes whipped cream.
   While beating, add the cheese, honey, and the remaining orange zest to the whipped cream.
   Beat until the cream becomes consistent.

   Spread the cream over the cake.
   Finally, decorate as you wish with the walnut kernels.
