Puff Pastry with Game Sausage and Apple

These appetizers are perfect for sharing at dinners with friends or parties.
Pre-cut puff pastry rectangles can be found in almost every supermarket.
You can use any apple as long as it's not too big.
If you'd like, you can substitute the game sausage with flour sausage or even blood sausage.

Ingredients

• 1 game sausage (Alheira Sausage), preferably 200 g
• 1 small Granny Smith apple, diced
• 1 tablespoon of butter
• 300 g (0.66 lbs) of puff pastry, cut into rectangles
• 1 egg yolk

   With a knife, make a cut in the sausage and remove its skin.
   Cut the sausage into pieces.

   In a frying pan, melt the butter over medium heat.
   When melted, add the diced apple.
   Cook for 5 minutes, or until the apple softens.

   After that time, add the sausage to the pan and stir.
   After about 3 minutes, when the sausage is soft, remove the pan from the heat.
   Let the mixture cool for 10 minutes.

   On a baking tray lined with parchment paper, spread out the puff pastry rectangles.
   Divide the sausage and apple mixture among the pastry sheets.
   Roll the filling into a log and wrap the puff pastry around it, forming a cannelloni shape.

   Using a sharp knife, cut each roll into 5 equal portions.
   Brush the puffs with the egg yolk.

   Preheat the oven to 180°C (356°F) and bake the puffs for 25 to 30 minutes, or until golden brown.
   Remove from the oven and serve.
