The potato starch cake is very similar to Sponge Cake.
It's extremely fluffy and light.
If you prefer, you can make this recipe without the citrus or only with the citrus that you prefer.

Separate the egg yolks from the whites.

Add sugar and butter to the egg yolks.
Beat until it forms a cream.

Beat the egg whites until they form stiff peaks.

To the cream, add the citrus zest, half of the potato starch, and the baking powder.
Stir with a spoon and fold in half of the egg whites.
Add the remaining potato starch.
And the remaining egg whites.
Fold everything in very well.

Pour the batter into the baking pan.
Preheat the oven to 180 °C (350 °F) and bake for 35 to 40 minutes.

If desired, sprinkle the cake with powdered sugar.
