Chorizo and Bacon Meat Cake

Meat cakes are traditional during Easter time.
In this recipe, the yeast used is baking powder.
If you wish, you can substitute the sausage and bacon, or part of them, with leftover chicken or meat, cooked sausages, or other charcuterie.

Ingredients

• 5 eggs
• 300 g (10.6 oz) of type 55 wheat flour, without yeast
• 100 g (3.5 oz) of melted butter
• 3 teaspoons of baking powder
• 250 ml (1 cup) of milk
• 250 g (8.8 oz) of chorizo, cut into small cubes
• 200 g (7 oz) of bacon, cut into small cubes
• Salt
• 1 mold or a rectangular tray approximately 30 cm (11.8 inches) in length, previously greased with butter and dusted with flour

Instructions

   Break the eggs into a bowl.
   Add the butter, flour, yeast, and a teaspoon of salt.
   Beat and gradually add the milk.
   Continue beating until the dough is homogeneous.

   In the mold, spread half of the dough.
   Smooth it out and on top, place half of the chorizo and bacon.
   Cover with the remaining dough.
   Finally, spread the remaining chorizo and bacon on top.

   Bake in a preheated oven at 180 °C (356 °F) and let it cook for 40 minutes.
   When the meat cake is golden and cooked, remove it and unmold.
