Oven-Roasted Pork Cheeks

Pork cheeks are one of the most flavorful cuts of pork, which can be stewed, grilled, or roasted in the oven.
This recipe is perfect for any time of the year, accompanied by a salad or sautéed broccoli rabe.
Pork cheeks can easily be found in a traditional butcher's shop.

Ingredients

• 8 pork cheeks
• 800 g (1.75 lbs) of small potatoes for roasting
• 1 large onion cut into half-moon slices
• 5 cloves of garlic, minced
• 1 sprig of parsley
• 3 bay leaves
• 250 ml (1 cup) of white wine
• 2 tablespoons of pork lard
• 2 tablespoons of olive oil
• 1 tablespoon of red pepper paste, preferably homemade
• 1 teaspoon of sweet paprika
• Piri-piri (a variety of chili pepper) to taste
• Salt

   In a tray or a clay dish, season the pork cheeks with garlic, a little salt (considering that the homemade red pepper paste is already salty), red pepper paste, and piri-piri.
   Mix the spices well with the meat.

   Place the bay leaves and parsley at the bottom of the tray.
   Let it marinate for about 1 hour.

   Season the potatoes with salt and sweet paprika.
   Mix in the olive oil.

   After the meat has marinated, spread the onion on top.
   Mix it with the meat, and around the tray or dish, spread out the small potatoes.

   Pour the wine into the bowl where you seasoned the potatoes, and mix everything.
   Drizzle the meat with the wine and seasoning mixture.
   Finally, place the lard on top.

   Put the tray in a preheated oven at 190°C (375°F) and let it roast for between 1 hour and 1 hour and 15 minutes.
   Halfway through, turn the meat over.
   Once the meat and potatoes are toasted and the sauce is reduced, remove it from the oven and serve.
