Bell Pepper Rice

This side dish is perfect to accompany fish dishes like fillets or fried fish.
If you wish, you can serve the rice inside halved and cleaned bell peppers.

Ingredients

• 125 ml of olive oil (1/2 cup)
• 1 onion, chopped
• 1 garlic clove, chopped
• 1 bay leaf
• 2 ripe tomatoes, diced
• 1 green bell pepper, sliced
• 1 red bell pepper, sliced
• 350 g of rice (1 3/4 cups)
• 800 ml of water (3 1/3 cups)
• Salt to taste

Instructions

   In a pot, heat the olive oil, onion, garlic, and bay leaf over medium heat.
   Stir and let it sauté for a while.

   Add the green bell pepper, red bell pepper, and tomatoes to the pot.
   Stir and let it sauté for approximately 15 minutes until the vegetables lose their water.

   Add the rice to the pot.
   Stir and let it fry a bit until the rice becomes translucent.

   Season with salt and add the water.
   Stir and let it cook for 20 minutes.

   Once the water has evaporated and the rice is cooked, it is ready to serve.
